Ingredients

– 7 large lemons (organic preferred)

– 2/3 cup white sugar

– 3 cups cold filtered water

– 1 to 1¼ cups dill pickle brine

– Ice

– Lemon slices and dill spears (for garnish)


Instructions

1. Roll and juice the lemons. Reserve peels.

2.Place the lemon peels and sugar into a large jar or pitcher. Lightly press them with a muddler or the back of a spoon to draw out the natural oils.

3.Pour in the fresh lemon juice and stir thoroughly until the sugar has completely blended in.

4.Add cold water, then mix in about 1 cup of pickle brine. Taste and adjust the brine level to your liking.

5. Strain. Serve over ice with lemon slices and a dill spear.

Notes

Use cold, clean pickle brine like Grillo’s or Claussen.
