Ingredients

1 teaspoon matcha powder

1 umeboshi plum

1 slice fresh ginger, finely grated

1 small piece dried kombu

8 ounces warm water  (160–170°F)


Instructions

Start by peeling a bit of fresh ginger and setting aside a small piece of kombu. Measure your matcha so it’s ready to go.

Gently warm your water. You want it hot but not boiling, just enough to draw out flavor without burning the matcha.

Drop the kombu into the warm water and let it sit for a few quiet minutes.

While it soaks, whisk your matcha in a small bowl with a splash of the warm water until it looks smooth and airy.

When the kombu has softened and released its flavor, remove it from the water.

Then stir in the freshly grated ginger, a small spoon of crushed umeboshi, and the whipped matcha. Let it all come together gently.

Taste it. If it needs balance, a drop of honey or a squeeze of lemon brings it right where it needs to be.

Notes

No umeboshi? Try a pinch of sea salt with a bit of fresh lemon for a bright, savory edge. Want a little extra lift? Add yuzu juice or a few chia seeds. If caffeine hits you hard, just cut back the matcha to a smaller scoop. You’ll still get the flavor, but with a gentler boost.
