Description

A nourishing Japanese-inspired breakfast bowl for weight loss. It features brown rice, egg or tofu, greens, and savory toppings. Clean, filling, and fast.


Ingredients

Scale
  • 1/2 cup cooked brown rice or leftover rice
  • 1 soft-boiled egg or 1/2 cup silken tofu
  • 1/2 cup steamed greens (spinach, kale, bok choy)
  • 1 tablespoon scallions, sliced
  • 1 teaspoon sesame seeds
  • 1 sheet nori, sliced
  • 1 tablespoon pickled ginger (optional)
  • 1 teaspoon low-sodium soy sauce or tamari
  • 1 teaspoon miso (optional)
  • Warm water or green tea for serving

Instructions

  1. Cook brown rice or use leftovers.
  2. Soft-boil the egg (6–7 minutes) or prepare silken tofu.
  3. Steam greens until soft.
  4. Assemble the rice in a bowl.
  5. Add egg or tofu and greens.
  6. Top with scallions, sesame seeds, and nori.
  7. Add pickled ginger and miso if desired.
  8. Drizzle with soy sauce or tamari.
  9. Serve with warm water or green tea.

Notes

Swap in chicken, edamame, or grilled fish if preferred.

Batch-cook rice and greens ahead for faster mornings.
