Ingredients

- 1/2 cup cooked brown rice or leftover rice
- 1 soft-boiled egg or 1/2 cup silken tofu
- 1/2 cup steamed greens (spinach, kale, bok choy)
- 1 tablespoon scallions, sliced
- 1 teaspoon sesame seeds
- 1 sheet nori, sliced
- 1 tablespoon pickled ginger (optional)
- 1 teaspoon low-sodium soy sauce or tamari
- 1 teaspoon miso (optional)
- Warm water or green tea for serving
Instructions
- Cook brown rice or use leftovers.
- Soft-boil the egg (6–7 minutes) or prepare silken tofu.
- Steam greens until soft.
- Assemble the rice in a bowl.
- Add egg or tofu and greens.
- Top with scallions, sesame seeds, and nori.
- Add pickled ginger and miso if desired.
- Drizzle with soy sauce or tamari.
- Serve with warm water or green tea.
Notes
Swap in chicken, edamame, or grilled fish if preferred.
Batch-cook rice and greens ahead for faster mornings.
